Is there any reason a kandra couldn't use a Hemalurgic spike and gain, say, Copper Allomancy?

Hemalurgy does not work that way. It's finicky like that sometimes.

Actually, I believe I've read somewhere official (from Brandon or Peter, I mean) that it could work, if the Kandra created the specific organs that needed to be punctured to activate the hemalurgical spike.

But I'm not sure. Don't quote me on that.

In Well of Ascension we're told that kandra can't use allomancy. Presumably, if TenSoon knew about a way to 'cheat' a kandra into allomantic power, he'd have said something. Therefore, if kandra CAN use hemalurgic spikes, it's likely a powerful Secret known only to Ruin and MAYBE the Lord Ruler.

Actually, what we're specifically told is that they can't use Allomancy by eating an Allomancer. And TenSoon is certainly sneaky enough to make that distinction unclear to Vin, whom he really didn't like at the time.
