With the Guts, Hidden Promise, and Quick Healer feats, was this done specifically so humans could have Species feats to gain as bonuses, or were there feats categorized in this way for some other reason?

Of the available trees, Species is the best fit for them.

It is kind of nice that a paladin doesn't have to become angelic, devilish, elemental, etc. Feature, or happy accident?

The Paladin gains a Heritage feat, not any species feat.
Demonic, Angelic, Draconic, Elemental, or fey.

It does, however, open the door for entirely human Sorcerors.

You can also use the Feat Exchange campaign quality to allow your paladin to choose a feat from another tree rather than a Heritage Feat. Wink
