I see theres a feat for using Dex instead of Str for Unarmed..

But what about Melee? A "Weapon Finesse" feat a la D&D...

Did they leave it out intentionally or am I just blind....

There's no feat for it. Anyone can do it with a weapon with the finesse quality. Finesse Basics lets you do it with any 1-handed weapon (amongst other things). Lastly, the Deft Swing advanced trick in Practice Makes Perfect allows a PC with a Strength of 13 or higher substitute his Dexterity when making a melee attack check.

I think someone said they left it out on purpose because Dex was so powerful already.

Seems I was wrong.

What I meant to say was "Using Dexterity for Unarmed feat"

Theres one for Melee but not one for Unarmed...any reason? Do u think its a good idea to let a player have "Unarmed FInesse"?

I forget exactly what it does, but doesn't 'Martial Arts(Dex)' do this and more?

Yeah, you're right.
Martial Arts:

You hand-to-hand fighting talents are black-belt caliber.

Prerequisites:
Career Level 6+, Weapon proficiency (Unarmed),
at least 1 other Unarmed Combat feat.

Benefit: Your base unarmed attack threat range becomes
19–20 and your unarmed combat damage increases to 1d6.
Further, when you gain this feat, you may choose 1 attribute. If
you choose Strength, your Strength modifier is applied to your
Defense and Initiative bonuses in place of your Dexterity modifier.
If you choose any other attribute, its modifier is applied to your
unarmed attack bonus and unarmed damage rolls in place of the
standard modifier. Finally, you’re always considered to be armed
with a deadly weapon when making Intimidate checks.

Well found, nice mate.

I see it now, gunna have to tell my player to wait till he's Career level 6+ then.

Is this a new character or an existing one? Martial Artists gain the feat t first level and one of the specialties (Master, I think. Books are elsewhere at the moment) grants it as a bonus.

Krensky's correct. The Master specialty can be found in World on Fire.
